In a large bowl, whisk together the flour, sugar, baking powder, and salt.
In another bowl, whisk together the egg, milk, melted butter, and vanilla extract.
Pour the wet ingredients into the dry ingredients and stir until just combined. A few small lumps are perfectly fine.
Heat a lightly greased skillet over medium heat.
Pour about ¼ cup of batter onto the skillet for each pancake.
Cook until bubbles form on the surface and the edges begin to look set. Flip and cook for another minute or two until golden brown.
Continue until all the batter has been used.
Place the pancakes on a serving plate, stacking them slightly unevenly for a homemade look.
Arrange the fruit in curved rows across the top of the pancake stack.
Start with strawberries, followed by mango, banana, kiwi, blueberries, and raspberries to create a rainbow effect.
Place dollops of whipped cream at both ends of the rainbow to create fluffy clouds.
Serve immediately.
