How to make carrot tomato juice
SERVES 2
INGREDIENTS
4 Carrots, washed and halved
6 tomatoes, roughly chopped
2 tbsp. lemon juice
25g fresh flat-leaf parsley
3 cm piece fresh ginger, peeled and finely grated
Crushed ice
150 ml chilled water
Preparation method
- Feed the carrot halves through a juicer. Pour the juice into a blender, add the chopped tomatoes and the lemon juice and blend.
- Add the parsley (reserving a spring to decorate), ginger and a small handful of crushed ice and blend again until smooth. Add the chilled water and whizz again.
- Pour the juice into a glasses of your choice, garnish with the parsley sprig and serve immediately.
