Chicken Salad is one of my most common dishes that i love and my most favorite, rich in protein, creamy, sweet from corn and carrots. It has some acid from lemon juice and freshness from the crunchy creamy dressing that makes it very appealing and appetizing.

The Chicken Salad is smoky and has a very deep flavour, very tasty and has a creamy soft texture. It is an all time comfort food very common for health fitness enthusiasts.

Ingredients For Making Chicken Salad

  • 2 chicken breasts cut into cubes
  • 1 tsp. smoked paprika
  • 1 tsp. garlic powder
  • 1 tbsp. cooking oil
  • 1 tsp. white pepper powder
  • 1 tsp. onion powder
  • 2 red onions cut into rings
  • 2 celery sticks, diced
  • 2 carrots cut into cubes
  • 1/2 cup sweet corn
  • 1 apple cut into cubes
  • 1 cucumber cut into cubes
  • 1 small lettuce cut into big chunks
  • 5 cherry tomatoes, halved

For The Dressing

  • 4 tbsp. mayonnaise
  • 1 tbsp. plain yoghurt
  • 1 tsp. mustard
  • 1 tsp. black pepper
  • 1/4 tsp. salt
  • 1 tbsp. lemon juice
  • 1 tsp. honey
  • 1/2 tsp. dried thyme

How To Prepare Chicken Salad

  1. Take a mixing bowl, add the onion powder, paprika powder, garlic powder, cooking oil and white pepper powder, coat the chicken pieces well.
  2. Put a griddle on medium heat, grill the chicken pieces for about 8 minutes on both sides, until its is cooked through. Shred the chicken into small pieces or cut into cubes as you like.
  3. Take a mixing bowl, add the mayonnaise, plain yoghurt, mustard, black pepper, salt, lemon juice, honey and dried thyme, mix well until well combined.
  4. Combine the onions, celery, cucumber, tomatoes, carrots, sweet corn and cherry tomatoes, add the dressing and mix well., add the chicken then put in the fridge to chill for about 1 hour.
