How to Make Lemon Chicken Rice

To make Lemon Chicken Rice, start by heating 1 tablespoon of olive oil in a large skillet over medium-high heat. Season the chicken with salt, pepper, and paprika. Add it to the skillet and cook for about 4–5 minutes per side, until golden and cooked through. Remove the chicken and set it aside on a plate.

In the same skillet, add the remaining olive oil, then sauté the onion for 2–3 minutes until soft. Add the garlic and cook for another 30 seconds until fragrant.

Add the rice to the skillet and stir to coat it in the oil and onions. Pour in the chicken broth and the lemon juice. Bring the mixture to a gentle boil, then reduce the heat to low. Cover and simmer for about 15–18 minutes, until the rice is tender and the liquid is absorbed.
