Lemon Chicken Rice is one of those meals I make when I want something fresh, simple, and comforting all at once. It’s bright from the lemon, warm and filling with the rice, and the chicken stays juicy and tender. I love making this when I don’t want to spend hours in the kitchen but still want something homemade and satisfying.

I especially love this Lemon Chicken Rice for busy nights it feels like a full meal but really comes together fast just like this Chicken Lazone and Dill Chicken Thighs
What You Will Need for Lemon Chicken Rice
Chicken Breasts or Thighs: I usually use boneless, skinless chicken breasts, but thighs work too. Just keep in mind thighs take a few extra minutes to cook.
Rice: Long-grain white rice works best, but you can use jasmine or basmati. It soaks up all the lemony flavor.
Lemon: Fresh lemon juice brightens the dish. I always zest a little on top for extra flavor.
Garlic and Onion: These build the base flavor for the rice and chicken.
Chicken Broth: Using broth instead of water makes the rice more flavorful.
Olive Oil: For searing the chicken and lightly cooking the veggies.
Seasoning: Salt, black pepper, and a pinch of paprika for color and a subtle kick.
Tip: If you want extra flavor, add a handful of fresh parsley at the end.

How to Make Lemon Chicken Rice
To make Lemon Chicken Rice, start by heating 1 tablespoon of olive oil in a large skillet over medium-high heat. Season the chicken with salt, pepper, and paprika. Add it to the skillet and cook for about 4–5 minutes per side, until golden and cooked through. Remove the chicken and set it aside on a plate.
In the same skillet, add the remaining olive oil, then sauté the onion for 2–3 minutes until soft. Add the garlic and cook for another 30 seconds until fragrant.
Add the rice to the skillet and stir to coat it in the oil and onions. Pour in the chicken broth and the lemon juice. Bring the mixture to a gentle boil, then reduce the heat to low. Cover and simmer for about 15–18 minutes, until the rice is tender and the liquid is absorbed.
Slice the cooked chicken into strips or cubes and place it on top of the rice. Sprinkle with lemon zest and fresh parsley if using. Serve warm and enjoy
