Large Flour Tortillas: Soft burrito-size tortillas work best because they hold everything without tearing.

Fresh Spinach: Fresh baby spinach wilts quickly and adds color and nutrition. You can roughly chop it if the leaves are large.

Feta Cheese: Crumbled feta gives this wrap its salty, creamy flavor. It really makes the whole wrap taste bright.

Eggs: Scrambled eggs add protein and make the wrap more filling. They also help hold everything together.

Olive Oil or Butter: Used to cook the spinach and eggs and to lightly toast the wrap.

How to Make Spinach Feta Wrap

To make this Spinach Feta Wrap, start by heating half of the olive oil in a skillet over medium heat.

Add the spinach (and garlic if using) and cook for about 1–2 minutes, just until the spinach wilts down. Remove it from the pan and set aside.

In a small bowl, whisk the eggs with salt and pepper. Add the remaining olive oil to the skillet and pour in the eggs. Cook gently, stirring slowly, until the eggs are soft and scrambled. I like to keep them slightly soft since they will cook a little more in the wrap.

Place a tortilla on a clean surface. Add half of the scrambled eggs, half of the cooked spinach, and sprinkle ¼ cup feta over the top. Fold in the sides and roll it up tightly. Repeat with the second wrap.

Place the wraps seam-side down in the skillet and cook for 2–3 minutes per side, until lightly golden and warmed through.
