Tuscan chicken soup combines the two things I love most, soup and chicken.

And honestly, who does not like soup? More importantly, who does not love chicken? As a chicken lover, I get slightly offended when someone casually says they do not like chicken. Like… how?

But anyway, enough of that. Let me show you how to make this soup.

This is one of those recipes that feels comforting, filling, and a little special at the same time. It is creamy but not too heavy, full of flavor, and perfect for those days when you want something warm and satisfying without spending hours in the kitchen.

How to Make Tuscan Chicken Soup

Start by seasoning your chicken generously with salt and black pepper on both sides. This is important because the sauce is rich, and under-seasoned chicken will taste flat later.

Heat a wide, heavy pan over medium-high heat. Add the olive oil and butter together and let them melt and get slightly hot. Place the chicken into the pan in a single layer and sear it for about 3–4 minutes per side. You are not trying to cook the chicken fully at this stage, you only want light golden color and flavor. Once seared, remove the chicken from the pan and set it aside.

Reduce the heat to medium. In the same pan, add the chopped onion or shallot. Cook it for 2–3 minutes until soft and translucent, stirring occasionally so it doesn’t brown. Add the minced garlic and cook for about 30 seconds, just until fragrant. Do not let the garlic burn.

Pour in the chicken stock and use a spoon to scrape up all the browned bits from the bottom of the pan. Let the stock simmer for 1–2 minutes so it reduces slightly and concentrates in flavor.

Add the heavy cream to the pan, followed by the Italian seasoning, smoked paprika, and add black pepper. Stir well and let the sauce simmer gently for about 5 minutes, until it begins to thicken slightly but is still fluid and creamy.

Stir in the sun-dried tomatoes and chopped spinach. Cook for another 1–2 minutes, just until the spinach wilts and blends into the sauce.

Return the seared chicken to the pan. Lower the heat, cover, and let everything simmer together for 10–12 minutes, or until the chicken is fully cooked and very tender.

Remove the chicken from the pan and shred it gently using two forks. Return the shredded chicken to the sauce and stir to combine. This step creates the soft, rustic texture seen in the image.

Add the grated parmesan cheese, if using, and stir until melted and incorporated. Taste the sauce and adjust seasoning with salt, pepper, or chili flakes as needed.

Turn off the heat and finish the dish with a small drizzle of olive oil or a knob of butter to create a glossy, rich finish. Let the dish rest for about 5 minutes before serving.
